How to convert oven recipes to air fryer

Air fryers are compact convection ovens: a powerful fan circulates hot air right around the food at high speed. That intense airflow transfers heat far more efficiently than the still air inside a conventional oven, so the same recipe needs less heat and less time.

The widely used conversion rule is straightforward:

  • Temperature: reduce by 20 °C (or 25 °F) compared with the oven temperature.
  • Time: reduce by about 20% — multiply the oven time by 0.8 and round to the nearest minute.

Why the −20 °C / −20% rule works

A conventional oven heats a large chamber and relies on radiant heat from top and bottom elements. An air fryer is much smaller and blows superheated air directly over the food's surface, mimicking the effect of deep-frying without the oil. That concentrated heat delivery means the outside browns quickly while the inside still has time to cook through — but only if you dial the temperature down slightly to avoid burning the exterior before the centre is done.

The 20% time reduction accounts for the smaller cavity (less air to heat) and the faster heat transfer.
